Strawberry, Cucumber & Little Gem Salad with Mint & Basil

This super refreshing salad is perfect for warm days – juicy strawberries, crunchy cucumber and crisp Little Gem, all tossed with fresh mint and basil. It’s light, cooling, and really easy to throw together – ideal for a quick lunch or a summery side.


Serves 2–4


Ingredients:
  • 1 head of Little Gem lettuce, leaves separated and torn

  • ½ a cucumber, thinly sliced into half-moons

  • A handful of fresh strawberries, hulled and sliced

  • A few leaves of fresh mint, torn or finely sliced

  • A few leaves of fresh basil, torn

  • Optional: a small handful of crumbled feta or toasted seeds/nuts for extra texture


For the dressing:
  • 1 tbsp extra virgin olive oil

  • 1 tsp balsamic vinegar or lemon juice

  • ½ tsp honey or maple syrup

  • A pinch of salt and black pepper


Method:
  1. In a small bowl or jar, whisk together the dressing ingredients until well combined. Taste and adjust to your liking—more vinegar for tang, more honey for sweetness.

  2. In a large bowl, gently toss together the Little Gem leaves, sliced cucumber, and strawberries.

  3. Scatter over the torn mint and basil.

  4. Drizzle with the dressing just before serving and toss lightly to coat.

  5. Top with feta or toasted seeds/nuts if using, and serve immediately.
